What’s For Dinner: Chocolate Chip and Walnut Pie

I love, love, LOVE this Chocolate Chip and Walnut Pie. And so does everyone else who I’ve made it for.
It’s another easy to make dessert, with ingredients including mostly what you have on hand already.
                                       
Here’ what you need for it:
  • 1 unbaked frozen pie shell
  • 2 large eggs
  • 1/2 cup of all-purpose flour
  • 1/2 cup of [granulated] sugar
  • 1/2 cup of [light] brown sugar
  • 3/4 cup of butter, at room temperature
  • 1 cup of [semi-sweet] chocolate chips
  • 1 cup of chopped walnuts
  • Whipped cream or ice cream (optional)

How I put it together:

  1. Preheat your oven to 325° F. You don’t need to thaw the frozen pie shell (I just take it straight out of the freezer when I am ready to put the pie together).
  2. In a large mixing bowl, beat the two eggs on high speed until they are light, fluffy, and foamy. Beat in 1/2 cup of flour, 1/2 cup of granulated sugar and 1/2 cup of light brown sugar until it is all mixed in well.
  3. Then beat in 3/4th cup of butter that is at room temperature. Finally, stir in 1 cup of chocolate chip morsels and 1 cup of chopped walnuts [I like more walnuts and less chocolate chips when I want it and tend to use half the amount of chocolate, but the majority of people are chocolate lovers 🙂 ].
  4. Spoon it into the pie shell and smooth it out so it’s leveled. Bake for an hour (or until the knife inserted halfway between edge and center comes out clean).
The pie tastes absolutely delicious just on its own, but I usually serve the pie warm with ice cream or whipped cream at the very least.

I Hate Being Sick

You know what’s worse than being sick for about two weeks? Spending about eight hours in the emergency room while feeling miserable!

I’ve said it before, and I’ll say it again – nurses – my god, are they the most patient people or what? I don’t know how they do it. I’m a fairly impatient and stubborn person as it, and to throw in the usual crankiness that comes with being sick… and to multiply that with however many patients the nurses are dealing with at a time…. my goodness.

On Eid, I woke up with a little sore throat that progressively got worse and then I developed a cold (runny nose, sneezing, coughing, the works) from that. That, as annoying as it is to be sick, was manageable with plenty of soup and liquids.

Unfortunately, a few days later it turned into a nasty viral. I went to the doctor’s on Tuesday last week and was told if it didn’t get better within 24 hours, I need to head to the E.R. Well, I waited over 48 hours and then bright and early on Thursday morning headed to the emergency room.

An I.V plus three shots via the IV line, a couple of tests and over eight hours later I made my way back home.

The last week for me has comprised mostly of sleep, plenty of rest, and LOTS of liquids… and fortunately, I feel so much better (just not completely fine yet).

Now, if I could just get rid of this cough too…

What’s For Dinner: Strawberry Galette

Ingredients you need:

  • 1 pie crust [store bought from the refrigerator section works great]
  • About 10-15 strawberries, stems removed & sliced
  • 2 tbsp white sugar
  • 2 tsp corn starch
  • 1 egg, beaten
Serve with:
  • Whipped cream, optional [homemade or store-bought]
  • Ice-cream, optional

To put it together:

  1. Preheat the oven to 350 degrees. Line a baking sheet with foil, or a liner [like a silpat mat].
  2. Rinse/clean all of the strawberries. Remove the stems from them all, and slice all of the strawberries lengthwise. Place the sliced strawberries into a bowl and add in the 2 tablespoons of white sugar and the 2 teaspoons of cornstarch on top. Stir, gently, until the sugar and cornstarch are evenly covering all of the strawberries.
  3. Unroll your pie crust, and lay it on lined baking sheet. Leaving about a one inch margin around the edges, add layers of the strawberries (overlapping each other) inside the pie crust. Fold the edges of the dough over the strawberries. Brush the dough with the beaten egg. Bake in the oven for 35-40 minutes.
  4. After you remove the galette[s] from the oven, let it cool for about 5-10 minutes before slicing [so it cuts nicely]. Serve with whipped cream or ice cream.

A House Turned Home

Alhumduillah, two LONG years after we first saw this house… we closed on our new home today!

After seeing many (and i mean MANY – like well over a hundred), we stumbled across a great house two years ago. The house was probably the first one that we all sort of liked… and more importantly it was a house that would work for us!!

It seemed to good to be true, and was proven rightfully so when we found out it was a short sale (hence the two year wait). Many times it seemed like it wouldn’t work out and, that we were wasting our time, that it wasn’t meant to be… but alas!

The house needs a lot of work, so we aren’t moving just yet – but just the thought of packing (and even worse — unpacking) is making me exhausted.

Inshallah, there will be many great memories in this new house for us.
